Western Ranger Cookies

Western Ranger cookies

I love these soft, chewy frontier cookies. They're great for snacks and lunch boxes. The addition of cereal makes it appear healthy! HA! I add mini M&Ms and cranberries because, well, I want to (and they were my sons suggestion)! Enjoy these Cowboy cookies with a tall glass of milk.












Ingredients

  • 1 cup butter, unsalted softened

  • 1 cup brown sugar

  • 1 cup white sugar

  • 2 eggs

  • 2 tsp vanilla extract


  • 2 cups all-purpose flour

  • 2 tsp cinnamon (opt)

  • 1 tsp salt

  • 1 tsp baking soda

  • 1/2 tsp baking powder


  • 2 cups crisp rice cereal

  • 2 cups rolled oats

  • 1 cup coconut

  • 1/2 -1 cup miniature M&Ms (optional)

  • 3/4 cup dried cranberries or raisins (optional)


Instructions

1. Preheat oven to 350F.


2. Cream butter and sugars together in a mixing bowl with the paddle attachment, until fluffy; approximately 2-3 minutes. Now add eggs, one at time, mixing in with vanilla.


3. Combine flour, cinnamon, salt, baking soda, and baking powder, then add to wet mixture. Mix on "Stir" mode until just blended.


4. When you add the additions, be prepared for a pretty stiff mass of batter. Add rice cereal, oats, and coconut; optionally, add m&ms, and cranberries. You can use the paddle on lowest setting, but you will have to use a spatula to distribute evenly.


5. Place a cookie scoop of dough on a greased baking sheet (or parchment or silicone pad), then slightly flatten.


6. Bake on the middle rack for 15-20 minutes until set. Remove and place on rack to cool.


 

Susie's Tips and Tricks


Make sure your butter is soft. A quick trick; open up the package and slice in one tbsp pieces. This will help the butter soften more quickly.


If you use old-fashioned oats you will get a chewier cookie.


This dough is rather stiff and thick.


Be sure and sprinkle the goodies evenly on the mass so that you aren't producing some cookies without goodies.


These cookies freeze well.


You want the cookies soft, check at 15 minutes. When the cookies are crisp on the edges and bottoms are golden, check the center; it should be just set.


Set a timer. I've burned the last batch of cookies a few times! LOL!
