I love this recipe! So many waffle recipe want egg whites-whipped. Who has time for that? These waffles are crisp, airy, and simple to make. Perfect for breakfast and wonderful as a side for Chicken and
Waffles or make great sides for chili.
Ingredients
1 3/4 cups ap flour
1/4 cup cornmeal
1/3 cup sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup shortening
1 1/2 cups buttermilk or sour milk
3 eggs
Instructions
1. Preheat your waffle iron.
2. Mix together dry ingredients: flour, cornmeal, sugar, baking powder, baking soda, and salt. Then cut in the shortening. You can use a pastry blender or two forks. You want it well-distributed and crumbly.
3. Blend the wet ingredients together thoroughly: milk and eggs. Then add to the flour mixture. You don't want to beat the mixture. That will give you tough waffle. You want to gently mix together. A few stray lumps is fine.
4. Be sure and grease the waffle iron well. You may need to do this a few times as you use all the batter. With my iron I use approximately 1/4 cup. Close the iron. Typically when the waffle stops steaming is is done.
Susie's Tips and Tricks
You may wish to place waffles in a 9x13 pan and keep in the oven, covered on warm setting so all can be served at once.
Note: You could use these as a side dish. Add some cumin and oregano; and prepare as above. Serve with chili.
