I love mole. That said, which one? The one I currently enjoy when I have enchiladas. Ha ha! I know that there are countless versions and recipes to partake in this wonderful sauce. We could quibble over what traditionally belongs in mole but I will just say that this sauce is Mexican inspired with a few short cuts and is pretty darn good and its made in a blender!
Ingredients
1 onion, diced
3-4 cloves garlic, minced
2 ancho chile (dried)
1 chipotle chile (dried)
1 oz Mexican chocolate
1/4 cup raisins or dried cranberries
1/2 banana
3 Roma tomatoes, seeds removed
pinch of coffee granules
1/3 cup Kirkland Mixed Nut Butter
8 oz chicken stock or vegetable stock
1/4 tsp cinnamon powder
1 tsp thyme
1/2 tsp smoked or plain sweet paprika
1 tsp cumin
1 tsp coriander, ground
pinch of allspice
pinch clove
Garnish: sesame seeds (opt)
Instructions
1. In a large skillet heat and add oil and soften onions and garlic. Add to the blender container.
2. Now in the same skillet add the dried chiles. Let slightly blacken; keep an eye on them.
3. Now add the dried peppers to the container and all the remaining ingredients.
4. Secure the lid tightly. Set blender to Setting 1. Now turn on the machine; to 4 and then to 10. Letting run until the sauce is steaming hot. If you have a setting for Hot Soups, etc use that instead.
5. The resulting sauce will be rather thick and creamy. You may thin with more chicken stock if desired.

Dried peppers have different names than dried. When an ancho chile is fresh its a poblano pepper. Chipotle peppers are fresh jalapenos.
Would you like to stretch your sauce a bit? Add some fresh or drained canned tomatoes.
Kinds of peppers you may wish to add: Habanero, Jalapeno, Poblano, Serrano.
Other additions: tomatillos, mango, apple, plaintain, pineapple, banana, dried cherries, or prunes.
I chose Mixed nut butter to easily add depth of flavour easily. You could add peanuts, sesame seeds, almonds, walnuts, pepitas.
Would you like a slightly thicker result? Add masa harina, bread crumbs, or corn or wheat tortillas.
