Under an Hour Chili with Beans

Ground beef chili with beans

As you might be aware I am a huge fan of the #instantpot and have been using pressure cookers for over 25 years. This recipe brings together all the wonderful flavors of chili in less than an hour. I use canned beans; should you want your chili with dried beans, prepare those first. I have had requests for this recipe for many years.











Ingredients


  • 1 tbsp oil

  • 1 onion, small diced

  • 3-4 cloves garlic, minced


  • 2 lbs ground beef, lean

  • 1 lbs ground pork


  • 2 tsp chili powder

  • 1 tbsp Montreal Seasoning or similar spice mixture

  • 2 tbsp unsweetened cocoa powder

  • 1 tbsp instant coffee powder

  • 1 beef bouillon cube

  • 1 tbsp oregano, dried

  • 1 tbsp cumin, dried


  • 3 oz beer

  • 4 oz can of Hot Spicy V8 juice


  • 15 oz jar of hot salsa, thick and chunky preferred

  • 1- 15 oz can of tomatoes, drained

  • 1-15 oz can seasoned tomatoes, drained or Ro-Tel (tomato jalapeno)


  • 3- 15 oz cans of beans you prefer: black, pinto, kidney, etc., drained

  • 2-4 tsp chili powder

  • tt salt and pepper



Instructions

1. Heat oil on Saute setting, then add onions and garlic. Break up beef and pork in pressure cooker, letting the meat brown a bit. The entire portion does not need to brown. Stir it here and there as you sprinkle the following; chili powder, Montreal seasoning, cocoa, coffee, bouillon cube, oregano, and cumin.


2. Now add beer and spicy V8 juice. Toss salsa and both cans of tomatoes on top. DO NOT STIR IN. Tomatoes have a tendency to burn if they touch the bottom of the pot; therefore, let them rest on top of the meat and pressure cook on high for 4 minutes. It may take a bit of time to come up to pressure. Let the pressure fall naturally.


3. Remove the lid once pressure has naturally fallen and add your desired beans. Taste and add more chili powder, cumin, and oregano. Don't forget salt and pepper.


4. Garnish as desired. Serve on rice, polenta, egg noodles, or on baked potatoes.


 

Susie's Tips and Tricks


You may substitute ground turkey with no changes in timing, etc.


Chili powder heat varies by company; add judiciously. Many chili powders contain salt, so be careful when using additional salt.


If you don't have instant coffee, just pour in 2 tbsp of strong fresh coffee.


Garnish with canned corn, cheese, cilantro, raw onions, some tortilla chips, sour cream or crema, etc.


Want a hotter chili? Add fresh jalapenos while sauteing onions, or add a chipotle powder.


This chili freezes well.
