Thick and Chewy Molasses Cookies

Chewy Molasses cookies

These cookies are so good. My kids love Molasses cookies and request them regularly! They are perfectly chewy and have just a bit of sweetness; I add mini chocolate chips to them but they definitely aren't necessary.



Ingredients

  • 3/4 cup vegetable oil

  • 1/4 cup molasses

  • 1 cup white granulated sugar

  • 1 tsp vanilla

  • pinch of salt

  • 2 eggs


  • 2 3/4 cups all-purpose flour

  • 1 1/2 tsp baking soda

  • 1 tsp cardamom

  • 1 tsp cinnamon

  • 1 tsp ginger

  • 1/8 tsp black ground pepper


  • 1/2 cup miniature chocolate chips


  • 1/4-1/3 cup of sugar for rolling

1. In a fairly large bowl (that will go in the fridge) place oil, molasses, vanilla, pinch of salt, and sugar together. Then blend in the eggs and beat smooth.


2. In a separate bowl stir: flour, soda, and spices. Add to the molasses mixture and blend together and combine well. If desired, you may add chocolate chips.


3. Cover bowl and place in fridge for 1 hour or longer (overnight works too).


4. Preheat oven to 350F and prepare baking sheets with grease/non stick spray or use parchment. Then roll small balls (1 1/2") in the remaining 1/4 to 1/3 cup sugar, coating them in granules. Place on cookie sheets. Bake 10 to 12 minutes until lightly browned and the center is just becoming firm. Remove from oven and cool on racks.

Be sure to spray baking sheets with non-stick to easily remove; alternatively, use parchment.
