You won't ever want to buy onion dip again. This recipe makes a fresher, healthier dip. I get lots of requests for this recipe. Add some bacon if you feel so inclined. #oniondip
Ingredients
1-3 onions depending on size, small dice (1 1/2 cups)
1-2 tsp olive oil
salt and pepper
2 tsp thyme
1 -2 tbsp balsamic vinegar
1-2 tsp garlic powder
1- 1/2 cups sour cream
1- 1/2 cups Greek yogurt
Optional: Fresh herbs: thyme or basil

1. Sauté onions in 1 to 2 tsp oil (do not use a lot of oil - you don't want greasy onions). Cook on low-medium heat, adding a sprinkling of salt and pepper after about 4 to 5 minutes. You want the onions to soften and thus, temper their harshness. I like some of the onion to catch a little colour. If it appears to be caramelizing very quickly, lower the heat. Add dry thyme and let it infuse some of the oil and onions. Now sprinkle on garlic powder.
2. Add balsamic vinegar. Let it cook off. Set aside to cool. You can wait 15 minutes, or place in refrigerator to begin your dip more quickly.
3. Mix with your choice of sour cream and/or yogurt. You want a total of 1 1/2 to 2 cups total, so choose a ratio that works for you. Blend well and refrigerate. Prior to serving, sprinkle in freshly chopped basil or thyme.
Susie's Tips and Tricks
Its very important to taste the dip. Don't just try by itself - use a chip or cracker you will be serving with the dip to determine if you should add more dried garlic or thyme.
Want to make it extra special? Add some crumbled bacon!
