My favourite muffin recipe in the world! With a buttermilk background, some oatmeal and fresh blueberries, you will want to eat them all (go ahead, just this once!). Add some white chocolate chips for extra pizzaz!
Ingredients
1 cup oatmeal
1 cup buttermilk or sour milk
1 tsp vanilla extract
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup brown sugar, firmly packed
1 egg, lightly beaten
1/4 cup butter, melted
1 cup blueberries, fresh preferred (well-drained if frozen and thawed)
1/2 cup white chocolate chips, optional

1. Preheat oven to 400F.
2. In a small bowl, combine oats, buttermilk, and vanilla. Let stand.
3. Combine dry ingredients: flour, baking powder, soda, salt, and brown sugar. Then add egg and butter.
4. Now add moistened oat mixture to flour mixture and combine until the ingredients are incorporated. Over-mixing will give you tough product, so be careful. Now gently fold in the blueberries and white chocolate chips.
5. Using a small ice cream scoop, divvy up the batter 2/3 to 3/4 full, in a greased tin, giving you approximately a dozen muffins.
6. Bake on the center rack until golden brown (approximately 15 to 22 minutes).
Susie's Tips and Tricks
Sour milk can be substituted for buttermilk. Place 1 to 2 tbsp lemon juice in a 1 cup measure and add milk until 1 cup liquid is met. According to Cook's Illustrated, it is not necessary to let it sit before using.
You may omit the white chocolate chips if desired.
