A simple, quick brunch or breakfast treat. I like savory waffles more than sweet. My daughter loves these. Include a cucumber salad or enjoy over spring greens for an impromptu dinner.
Ingredients
10 oz sweet potato (2 med)
2 tsp garlic and herb seasoning
1 tsp onion powder
tt salt and pepper
2 eggs
2 tbsp sour cream or Greek yogurt
2 oz shredded cheddar cheese
1/3 cup flour
Chopped fresh herbs (basil, or cilantro)
Salsa
Sour cream

1. Preheat waffle maker to medium high heat.
2. Peel and grate potatoes (medium shred). Add seasonings, eggs, yogurt, cheese, flour and herbs.
3. Place 4-5 full tablespoons batter on a lightly greased waffle iron for each section. Let cook until firm and dry; approximately 4-6 minutes.
4. Garnish with sour cream, fresh salsa, or some fresh herbs.
Susie's Tips and Tricks
You may use gf flour if desired.
Some sweet potatoes may be drier or moister than others. You may need to adjust the amount of flour to produce a waffle that holds its shape. Make a sample.
This makes approximately 5 small waffles.
