There is nothing like a plate of Swedish Meatballs. Accompany with mashed potatoes, a cucumber salad. Add some lingonberry sauce and this wonderful garlic apple creamy sauce. Traditional swedish meatballs have a very soft texture. You'll need your mixer for this recipe. If you prefer a dense product, just mix by hand.
Ingredients
1 lb beef, lean ground
1/2 pork, ground
1/2 cup ice cold water
1 onion, medium, grated finely
2 egg yolks
2 tbsp brown sugar
1 tbsp mustard, I prefer Dijon
1/2 tsp allspice
1 tsp nutmeg
salt and pepper to taste
dill, sprinkling for garnish
1 tbsp oil or butter
4 garlic cloves, minced
1 apple, peeled, and small diced
bay leaf
2 tsp thyme, dried
1 tsp cardamom
2 tsp onion powder
4 oz apple cider (non-alcohol is ok)
cayenne pinch
paprika pinch
5 oz heavy cream
salt and pepper to taste
Instructions
1. In your Kitchenaid mixer add beef, pork, water, onion, egg yolks, sugar, mustard, allspice, nutmeg, and salt and pepper.
2. Using mixer with paddle, beat on low until blended together. Then turn mixer to medium high and beat until mixture gets light and fluffy. Approximately 4-5 minutes.
3. Shape meatballs using a scoop, I use (black handle) 1 fl oz scoop. Place a few inches apart on a rimmed cookie sheet and bake at 350F for 22-25 mins until cooked to 165F.
4. Meanwhile I prepare sauce:
In a medium skillet at medium heat at oil/butter . Now add garlic, apples, and bay leaf. Let soften slightly then add thyme, cardamom, onion. Deglaze pan with apple cider. Add a pinch of cayenne and paprika. Add heavy cream and let thicken. Serve over meatballs.
Chef Notes:
Allspice is a quintessential ingredient in this recipe.
