Spinach Mint Pesto

Spinach mint pesto with Asian flair
Pesto can use any green, including spinach.

A pesto comes in many forms! Basil is ever popular and is the most well known form, though any green herb or leaf may be used as a base. This recipe is a pesto with an Asian twist! Lower calories too!









Ingredients

  • 4 oz blood orange juice

  • 1/4 cup rice vinegar

  • 1 tbsp sesame oil

  • 2 tbsp soy sauce

  • 2 tbsp thai sweet chili sauce

  • 8 cups spinach

  • 1/2 cup cilantro, a bunch

  • 1/4 cup mint, chopped

  • 1 tbsp fresh ginger root, grated

  • black pepper

  • white sesame seeds



Instructions


Place in blender, the juice, vinegar, oil, soy sauce, thai chili, spinach, cilantro, mint, and ginger. Pulverize until spinach is broken down. Garnish with black pepper and sesame seeds.

Serve on zoodles, or vegetable of choice.
