Spinach dip is damn good. It's quite possibly the best way to enjoy spinach. Turkey meatballs are a huge hit in our house and filling them only seems a natural fit. Be sure and do a test meatball, you want those flavours to sing.
Ingredients
Spinach filling:
10 oz defrosted spinach, squeezed dry
1 scallion, finely minced
1/4 cup cream cheese, softened
tt hot sauce
1 cup shredded Romano, Parmesan
1 tsp dried garlic powder
2 tsp dried onion powder
pinch nutmeg
pinch celery seed
2 tsp Montreal chicken seasoning or garlic herb of your choice
1/4 cup bread crumbs
squeeze lemon juice
Meatball:
3 lb ground turkey
1/2 onion, finely diced
1 tbsp Dijon mustard
1 egg yolk
1 tbsp Worcestershire sauce
2 tbsp sun-dried tomato, minced
fresh herbs, basil, etc
salt and pepper
Sauce
3 oz wine
2 cups marinara sauce

1. Mix together cream cheese, spinach, cheese, garlic, seasonings, and bread crumbs.
2. Gently mix together ground turkey, onion, mustard, egg yolk, Worcestershire, tomatoes, fresh herbs, and salt and pepper.
3. Using a no 24 Scoop (1 1/2 fl oz, red) using your thumb make a small divot in the ball. Add 2-3 tsp spinach to the center. Then pull the meat up from the sides to cover the spinach.
4. Saute on a few sides. De-glaze with some wine. Now add tomato sauce. Let simmer; don't boil. Tossing meatballs around a few times. Approximately 15- 20 minutes or until meatballs are cooked through 165F.
Susie's Tips and Tricks
Store-bought vegetable soup mix has many ingredients, including carrot, celery root, cabbage, leeks, and more. My ingredient list is bit heavy.
You can use Parmesan cheese, cheddar, Monterey, or Spicy pepper jack.
Some chopped bacon is a nice addition to the spinach dip.
You can use a mixture of beef and or pork if desired.
Use your garlic and herb seasoning for Montreal chicken seasoning.
Be sure and do a flavour test for your meatball. Adjust as necessary.
