German rolls are always hit at our house. Traditionally the dough is sprinkled liberally with plain sugar. To up the ante you can spice up the sugar with a spice mix, cinnamon, chai seasonings. Delicious.
Ingredients
1 egg
3/4 cup sour cream, slightly warmed 180g
2 tsp vanilla extract
2 tbsp butter 28g
1/3 cup white sugar 66g
1 tsp salt
2 2/3 cups bread or all-purpose flour 209g (+more)
2 tsp instant yeast 6g
1/2 cup white sugar 99g
2 tsp sweet seasoning (favourite) opt

Place ingredients as suggested by your bread machine. Some suggest dry first or wet. I have found it only matters when utilizing the delay start.
Use the dough setting. At the 5-6 minute mark check that the mixture is smooth and slightly tacky. Go ahead; touch it. This dough should be very very soft. Be sure and incorporate all of the flour.
If necessary you may need to add more flour.
Remove dough immediately after kneading is complete. No need to let rise!
Press with your hands into a large rectangle. I made mine about 1/2” /1.25cm thick. I rolled it a little bit. Toss the dough several times in the white sugar (1/2 cup mixture). Now cut in small rectangle shapes. Approximately 5”/12.7cm long. Twist and pinch ends together firmly. Make a nice circle.
Place on a lightly greased baking sheet. Cover with plastic wrap. Then place a towel over top and let rise for an hour or so.
Bake at 350F/176C for 18-20 minutes. Lightly brown.
Remove and cool on wire. They are slightly sticky.
Susy’s Tips and Tricks
Warm up your sour cream with a little touch of the microwave.
You can use 1/4 cup sugar if desired; in the dough.
Start with the least amount of flour. Add more but keep it very soft; kind of loose.
Use plain white sugar for the sprinkle. Or use a few tsp cinnamon. Perhaps a chai spice mix, some sugar, and dried orange peel. Spice mix is lovely too.
