Soft Milk Buns

Milk buns, basket of buns, japanese milk rolls,
I love fresh buns with homemade jelly.

These tender buns are so good. You'll need a mixer for these. The machine does the work, until you shape these buns.


Ingredients

  • 4 1/2 cups all purpose flour

  • 1/2 cup sugar

  • 1/2 cup milk powder

  • 1 tsp salt

  • 2 tsp instant yeast


  • 1 1/4 cups milk (2% works)

  • 1/4 cup melted butter or vegetable oil

  • 1 egg



Instructions


1. Place dry ingredients in mixing bowl. Stir together.


2. Heat liquids: milk and butter or oil if using instant yeast 125F. If regular yeast (110F).

Add egg. Lightly beat with the milk mixture.


3. Now with dough hook. Turn on station 1 and slowly add the warm liquids. It will slowly blend. When the majority is blended change the setting to setting number 2. Set timer 12 mins. Pause occasionally to move the dough around. It will be sticky. And quite elastic.


4. Remove and place in an oiled bowl. Cover. Let rise; depending on the environment; anywhere from 30-50 minutes. Use poke test to confirm a full rise. When the indent stays; it’s ready for shaping.


5. Shape into round 2 oz balls. And place in pans. Let rise again approximately 20-30 mins. (Do the poke test.) This makes approximately 18 -2 oz buns.


Bake 325F. 20-25 mins until golden brown.

Could this not be mixed, kneaded, and first rise in the breadmachine?
