This flat bread is delicious and simple to make. You can make it thinner, be prepared to use your muscles! Keep it plain if desired, I chose to add an herbal topping and some fresh Parmesan. It's great as a simple side for an Italian dinner.
Ingredients
2 1/4 cups / 9 oz bread flour
1 tsp instant yeast
1/2 tsp salt
1 tbsp olive oil
7 oz warm water
dried herbs for sprinkling
drizzle of garlic olive oil or plain
tt salt and pepper
parmesan, grated for sprinkling

1. Preheat oven 450F
2. In a heavy-duty mixer add flour, yeast and salt. Stir together.
3. Mix water and oil together; heat to 125F. With machine on Stir setting and with the dough hook, slowly add warmed liquid. Turn machine to setting 2 and let knead for 3-4 minutes. The mass should pull together as a ball. Move it around a bit. Squeeze in your hand--if its very sticky, continue the machine for another minute.
4. Now divide the dough in sections you prefer. I did about 12. Roll these balls into 4-5" diameter circles or oblong shape.
5. Lay on a lightly greased sheet and sprinkle with dried herbs, salt and pepper. Drizzle a bit of olive oil. Let sit 5 to 10 minutes then bake for 8-10 minutes until golden brown.
6. Remove from sheet and lay on rack. Sprinkle with Parmesan if desired.
Susie's Tips and Tricks
Use all-purpose flour if need be. It will be fine.
Skip the herbs and cheese. Go plain.
