Rice-A-Roni

Homemade rice-a-roni
Toss the box! Make this tonight.

This is my take on Rice-a-Roni. The mix of rice and pasta is a well-loved dish served in Iran. Using your electric pressure cooker gives you a wonderfully flavoured side dish. Its easy to add some diced tomatoes, finely diced carrot, or some leftover chicken.








Ingredients


  • 1 tbsp butter or evoo

  • 1/2 cup basmati rice

  • 1/2 cup angel hair pasta, broken in 1/2'' -3/4" pieces

  • 1 small onion, diced small

  • 1 stalk celery, minced

  • 1 tbsp salt-free seasoning mix

  • 1 tsp parsley, dried

  • 2 tsp thyme, dried

  • 1/4 cup white wine

  • 1 1/4 cup water and chicken cube or chicken stock


Garnish:

  • 1/3 cup Parmesan cheese, grated

  • 2 scallions, chopped


Instructions


1. Melt butter in pressure cooker pot, toss in basmati rice, angel hair pasta. Sauté a bit to get some browning. Add small diced onion, minced celery. Then added garlic and herb salt free mixture as well as parsley and thyme. Then de-glaze the pot with wine. Then added water with chicken cube (or stock if desired).


2. Set pressure cooker to manual High Pressure 2 minutes. 5 mins natural pressure release. Then quick release pressure.


3. Added some Parmesan and fresh sliced scallions. Serve and enjoy!


 

Susie's Tips and Tricks


This recipe is easily doubled. It is not necessary to double the time.


Highly recommend! Delicious! You won't want to buy a box again.
