Chicken and peppers in a seasoned sour cream sauce. Super easy to make; and with my additions I made more nutritious and yet still delicious. Try it tonight!
Ingredients
oil
1 onion, medium diced
celery, medium diced (2-3 stalks) medium diced
1-3 fresh peppers, red is great! medium diced
1 lb fresh mushrooms, sliced a bit thick
1 1/2 lb chicken thighs (bite-size pieces)
2 - 3 tsp Spanish smoked paprika
1 tbsp dried oregano
1 -2 tsp cumin
1 tsp dried thyme
1 tbsp unsweetened cocoa powder
tt chipotle
tt salt and pepper
2 cups sour cream
1 tbsp red wine vinegar
1/2 cup water
1/2 tsp chicken powder
tt cilantro, roughly chopped
scallions
tt Parmesan cheese
tt Cojita Cheese
canned corn kernels
bacon
Instructions
Please read the Tips and Tricks below.
1. In a large saute pan add some oil to a hot pan. Add the onions to the pan on medium low heat. In this recipe you want the onions to caramelize. Turn the temperature down as needed.
2. Steam the cut up celery in the microwave until tender and set aside.
3. Season chicken with paprika, oregano, cumin, thyme, cocoa powder, salt and pepper. (I skipped the chipotle--I'm weak!) Toss in the pan along with peppers and mushrooms and cook until tender. Should you prefer a more tender vegetable, set aside the chicken and cook longer. Cook chicken until 165F.
4. Now add the celery to the pan and heat up. Add sour cream, vinegar, water, chicken powder and additional salt and pepper to taste.
5. Garnish with Cojita cheese or Parmesan along with cilantro.
Susie's Tips and Tricks
Traditionally, this recipe calls for a nicely caramelized onion. This can take quite some time, I say go for 10 minutes and call it a day.
I added extra nutrition to this recipe by including celery and corn. It's not usually included but I say go for it.
If you don't have chipotle use some chili powder. Just bring some spice.
Red peppers are wonderful, but to give it more Latin flair you could use Poblano peppers. If you prefer a spicy dish, use dried chili powder or add a fresh jalapeno to the saute.
Traditionally one would Mexican sour cream, but regular dairy kind works just fine. You could even use some Greek yogurt or some cream cheese. Just don't boil it; simmer until melted.
Cojita cheese is salty Romano style product; I love it and use it often. Parmesan makes a good substitute.
Serve with some extra veggies; say some sugar snap peas.
You can steam cook celery easily in the microwave. Place in a microwave dish, cover with plastic wrap, poke a few holes and cook approximately 5 minutes.
