Pepperoni bread is a favorite to many. It's simple and easy to assemble. I have added more cheese and a few extra ingredients for fun. You can use frozen dough, but if you prefer, you can use my thin-crust recipe found here.
Ingredients
1 lb pizza dough or bread dough (my recipe: thin-crust pizza dough)
Herbal egg wash:
1 egg
1 1/2 tsp dried Italian seasoning
1/2 tsp garlic powder
1 layer of pepperoni - 36 pcs or more as desired
8- 12 oz cheese: e.x.-5 round slices of provolone, 1 cup grated Mozzarella
2-4 tbsp Romano or Parmesan cheese, shredded
tt garlic and herb seasoning
1/2 of 1 onion, finely minced
4-5 fresh basil leaves, chopped
Optional:
3-4 pcs of sun-dried tomatoes, chopped
4 tbsp scallions, finely chopped
4-5 bacon slices, chopped

1. If necessary, thaw dough to room temperature, or use this recipe. It is not necessary to wait to use the dough if freshly made. Begin shaping in a large rectangle approximately 13X10 with a rolling pin. You want it about 1/4" thick in the center, but on the long ends about 1/8" thick around the edge (about 3" from edge).
2. Using a pastry brush, spread half of the egg wash mixture all over, leaving 2" around the edges unwashed.
3. Place pepperoni in middle third of the dough, down the center. About 4 pepperoni rounds across. Leave a couples inches at each end without pepperoni or other ingredients. Cover with cheese of your choice and onions, tomatoes, or you may layer again with more pepperoni if desired. You may also add a sprinkling of garlic and herb seasoning.
4. Prepare a greased, rimmed cookie sheet. Now fold one side of dough (long end) over the other, overlapping slightly. Fold the short ends towards the center ensuring there are no gaps.
5. Flip the seamed side of the loaf onto the prepared cookie sheet. Then score with a serrated knife a few slashes. I did about 5- 2" apart, at an angle.
6. Preheat oven to 375F. Let rise about 20 minutes. Now place the remaining herb wash on the loaf.
7. Bake until golden brown; approximately 22 to 25 minutes.
Susie's Tips and Tricks
You can use store-bought dough if desired.
If you don't have a rolling pin, you could use a 2 liter unopened soda bottle.
You could adjust cheese and meats as desired. You could also include green peppers, mushrooms, salami or ham.
Use a garlic and herb seasoning instead of Italian seasoning if desired.
Adjust the cheese as desired. I used the cheese I had: 8 to 12 oz grated is nice.
Lower calories if desired by using turkey pepperoni.
