Peanut Blossom Cookies

Peanut cookies with chocolate kisses
Delicious and simple! Peanut blossom cookies

I was able to get some Hershey Kiss packages for just over $1- after the holidays. Stock up! This recipe is extra nice because its not necessary to cream the butter and sugar together; everything goes into one bowl.

















Ingredients

  • 1 3/4 cups all-purpose flour

  • 1/2 cup brown sugar, firmly packed

  • 1/2 cup white sugar

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup peanut butter

  • 1/2 cup shortening

  • 2 tbsp milk

  • 1 tsp vanilla

  • 1 egg


  • 27-35 Hershey Kisses, unwrapped

  • white sugar for rolling



Instructions

1. Preheat oven 375F.

2. In a mixing bowl, place flour, brown sugar, sugar, baking soda, salt, peanut butter, shortening, milk, vanilla extract, and an egg. Blend on low speed until mixed together fully. The dough will be somewhat stiff.


3. Shape in small balls (1 inch); I used a standard no. 40 scoop (its so much faster!). Roll each ball in the white sugar. Now place on an un-greased baking sheet about 2" apart.


4. Bake 10-12 minutes until lightly golden brown. Don't let them bake too long. Remove from the oven and immediately press the kiss into the center. The edges may crack a tiny bit; that's okay.


5. Now place the sheet BACK in the oven for 1 minute. This will set the chocolate. Remove and then place cookie on a rack to cool. Try not to eat them all!



 

Susie's Tips and Tricks


Don't use butter! I tried it and the cookie will be too crisp. The texture is off. Use shortening; I buy an organic one for my baking.


Be sure to clean off the grease from the cookies each time you prepare a new batch.


This gives you approximately 27-32 cookies.


Secret! Placing the cookies in the oven a second time will set the chocolate much more quickly. Otherwise it takes ours to set.
