This bar is so refreshing and delightful; I dare say, I want to eat it for breakfast! Haha! The combination of orange, cranberry and white chocolate seems to work very well. You need a food processor or high-speed blender, but its worth it. I have frozen these and they were just as tasty a few weeks later. Yes, my kids gobble up everything!
Ingredients
1 medium orange, well-scrubbed
3/4 cup dried cranberries
1/2 cup butter
1 cup white sugar
1 egg
1 tsp vanilla extract
2 tsp cinnamon powder
1 tsp cardamom
2 cups flour
1/2 tsp baking powder
1/2 tsp salt
1/3 cup finely chopped crystallized ginger
1/2 cup roughly chopped nuts

1 cup white chocolate chips, melted

1. Chop entire orange, skin and all, into pieces and place in processor with dried cranberries. You want to process the mixture into a chunky mass. Preheat oven to 350F.
2. Cream the softened butter and sugar together. Add egg and vanilla extract. Stir in cinnamon, cardamom, flour, baking powder, and salt. Now add orange cranberry mash. If desired, add ginger and nuts. It will be stiff and a little difficult to manage.
3. Place in a 9X13 greased pan. Bake at 350F for 22 to 25 minutes, until edges are crisp and center is set (a soft, golden brown). Once it is cool, drizzle white chocolate on top.
Susie's Tips and Tricks
Optionally, you could use raisins or dates instead of cranberries.
A rum extract could be a lovely addition as well.
If you don't have white chocolate chips, just mix a bit of orange juice and powdered sugar, then drizzle on top.
