These remind me of onion rings, without the work and with less fat. Perfect as a side dish for a bbq or family dinner, they go with just about anything! I love the mild sweetness from the onions with freshly chopped scallions, they have a delicious spring-like taste.
Ingredients
3/4 cup all-purpose flour
2 tbsp white sugar
2 tbsp cornmeal
2 tsp baking powder (make sure it's fresh)
1 pinch kosher salt
1/4 tsp celery seed
2 1/2 cups small diced onions, white or yellow
3/4 cup milk (2% works)

1. Blend in medium size bowl: flour, sugar, cornmeal, baking powder, salt, and celery seed. Then add onions, stirring to mix in and break up pieces (you may set this aside until you are ready to cook the patties, if desired). Add milk and stir together.
2. Turn large skillet on medium heat with a swirl of oil (if using a non-stick pan you may omit oil). I use a scant 1/4 cup or so of batter. Be sure to level the batter and then caramelize on both sides. Set on paper towels (if they are greasy) and keep warm in oven.

Preparing ahead of time helps one manage the order of operation for making dinner. It certainly helps with this recipe.
You could add some fresh herbs inside, or crumbled bacon. Cheese on top could be a nice addition as well. Serve with ketchup, sour cream, or a hamburger sauce.
