Nana's Coffee Cake

Coffee cake with jam and coconut
Apricot coffeecake is a wonderful breakfast treat.

My mother-in-law Loralyn kindly gave me this recipe. It's an old German recipe that is easily put together in just a few minutes. I added apricot jam for extra richness and flavour. The perfect treat with a morning coffee!





Ingredients

  • 2 eggs

  • 1 cup white sugar

  • 1 tsp vanilla extract


  • 1 cup all-purpose flour

  • 2 tsp baking powder

  • 1 tsp cinnamon


  • 2 tbsp vegetable oil

  • 1/2 cup milk


Bottom layer:

  • 5 tbsp butter, softened

  • 2 tbsp brown sugar

  • 1/2 cup apricot jam

  • 1/2 cup nuts or coconut



Instructions

1. Preheat oven to 350F.


2. Beat together eggs, sugar, and vanilla extract. Now add flour, and sprinkle baking powder all over.


3. Warm up vegetable oil and milk in a saucepan or microwave (just enough to take off the edge). Now add to the dry mixture. Gently blend together until combined.


4. Place in a parchment lined or heavily greased 8X8 pan.


5. Mix together butter, brown sugar, jam, and nuts or coconut. Drop tablespoons of topping all over the pan.


6. Bake on middle rack for 20-25 minutes, until baked completely. Test with a toothpick.



 

Susie's Tips and Tricks


Use any jam your prefer; marmalade jam or apricot pineapple works.


Omit nuts if desired.
