An old recipe that is perfect for a morning treat. It’s not very sweet which is nice change from cinnamon rolls. It’s also easy to assemble with your mixer.
Ingredients
3 cups all-purpose flour, divided
1 tbsp white sugar
2 1/4 tsp instant yeast
1 tsp salt
1/2 cup butter
1/4 cup milk, 2% works
1/4 cup water
3 eggs
1 tsp vanilla extract
1 cup chopped almonds
1 cup white sugar
1 tsp cinnamon (opt)

Using a mixer bowl as for a KitchenAid style mixer add 1 1/2 cups flour, sugar, yeast, salt, and butter. Using the paddle blend in the butter as if preparing pie crust. You want to 'cut in the butter' causing it to mix in with pieces that become the size of peas. This shouldn't take more than a minute or two.
2. Heat milk and water to 125 F then add to the flour mixture. On setting 2 beat until smooth. Now cover and set aside in a draft-free location for 15 minutes.
3. Now add the 3 eggs and vanilla and blend until well-combined.
4. Now add the remaining 1 1/2 cups flour; and blend in using the dough hook on setting 2. Once all flour is incorporated and the dough is smooth, cover and set aside 30 to 40 minutes.
5. Check the dough with the poke test. Once it has risen well cut off small 1 1/2" chunks of dough and roll in sugar, and cinnamon if desired. Place in a well-greased pan and sprinkle almonds randomly. I made a figure 8 shape but you may position as desired.
6. Preheat oven to 400F. Let your monkey bread dough coffee cake stand 10 minutes then bake 10 -15 minutes or until lightly browned.
Susie's Tips & Tricks
If using active dry yeast you may still add to dry ingredients per King Arthur's Flour Company but, the liquid temperature should be no more than 115F. Also it may take twice as long to rise.
Poke test: gently give your dough a good poke. If it springs back immediately you need more time; the yeast has more gases and hasn't reached the maximum potential. Let it rise a few more minutes. If it slowly returns; with a slight indent in a few seconds; its ready.
I added a simple glaze; mixing 1 cup powdered sugar with a drop of vanilla extract, and a few teaspoons of water to a thin drizzle.
