Loaded Cauliflower Casserole


A lovely main or side dish for your busy weeknight meals. This veggie rich casserole is a hearty casserole you will love. Some people might suggest this is a low-carb meal; I personally love the flavors and textures.













Ingredients


  • 3 cups cauliflower, florets, medium size


  • 1/2 Tbsp butter

  • 1/2 medium onion, diced

  • 2 tsp minced garlic

  • 2 stalks celery, diced

  • 5-6 mushrooms, cut in quarters

  • 1-3 tsp garlic and herb mixture

  • 1-2 oz white wine

  • 1 lb ground turkey

  • tt salt and pepper

  • 6 oz cream cheese, cut in cubes

  • 1/3 cup cheddar cheese


  • 3/4 cup half & half

  • 3 eggs

  • 2 tbsp butter, melted

  • 1/2 cup shredded cheddar cheese

  • 1/3 cup Parmesan, grated


  • garnish: chopped green onion


Optional: crispy turkey or bacon


Instructions


  1. Preheat oven to 375F.

  2. Steam cauliflower in the microwave until tender crisp. Set aside.

  3. In a large skillet, sauté onions, garlic, celery, and mushrooms in a bit of olive oil or butter. Season with the herb mixture. Let soften. Add the white wine and cook off.

  4. Now add the ground meat. Be sure and break up the product. Season with salt and pepper along with more herb and garlic mixture.

  5. Add the cooked cauliflower to the pan.

  6. Turn the heat to low and drop the cream cheese cubes and cheese all over the pan. Toss to help melt.

  7. In a small bowl blend together half & half with eggs and melted butter. Set aside.

  8. In a greased 3.5 Quart (or a 9X13) oven safe casserole dish put the ground meat and vegetable mixture evenly.

  9. Now evenly pour the egg mixture throughout the casserole dish. Sprinkle Parmesan and cheddar cheese on top.

  10. Place in oven uncovered for 25-30 minutes; until the egg mixture is cooked through.

  11. Garnish with green onions and some crispy bacon if desired.


Susie's Tips and Tricks


  • If you have more cauliflower, no worries, you may want to slightly increase the eggs by 1 and increase the half and half to 1 cup.


  • You may wish to use ground beef instead if your family doesn't like turkey.


  • Adding some crispy bacon is a nice addition.


  • If your family isn't fond of mushrooms, just exclude and up the vegetable count. Add some defrosted peas.
