These oatmeal lemon squares are an old recipe, but still very good. I feel healthy when I have them. What?! They have oatmeal in them. Haha. Of course, plenty of sugar, but dessert is important too. I love the tart dry cherries but you could use dried cranberries if you prefer.
Ingredients
14 oz can of sweetened condensed milk (not evaporated)
1/3 cup dried cherries (you could substitute dried cranberries)
1/2 cup lemon juice
1 tbsp lemon rind
1 tsp almond extract
1 cup all purpose flour
1 cup oatmeal
1 tsp baking powder
1/2 cup coconut flakes
1/3 cup almonds, coarsely chopped
1/2 cup brown sugar, firmly packed
1/2 cup unsalted butter, melted
Optional: white chocolate melted for drizzling on top
Instructions
1. Preheat oven to 350F
2. In a medium bowl blend with a spoon, condensed milk, dried cherries, lemon juice, lemon rind, and almond extract.
3. In a mixer bowl combine, flour, oats, baking powder, coconut, almonds, and sugar. Add butter, and turn on mixer to incorporate. (level 1-2) You want the butter to form soft crumbs that look around the size of peas.
4. Now take half of the crumbled mixture and sprinkle evely over the bottom of a 9X9 pan. Then pour on the lemon and cherry filling. Now sprinkle the remaining crumbs on top and bake 25-30 mins or until lightly brown.
5. When cool you may drizzle a bit of melted white chocolate. Once cool you may slice as desired.
