Kaiser Loaf Bread Machine

Goodness this bread is delightful. Traditionally, most people enjoy Kaiser rolls. I decided that a twisted loaf would be lovely.


Ingredients


  • 2 cups warm water

  • 3 tbsp oil

  • 4 tbsp white sugar

  • 1 1/2 tsp salt

  • 5 cups bread flour

  • 4 tsp instant yeast


1-2 tsp poppy seeds or sesame seeds

  1. Place the ingredients in the order recommended by your bread machine.

  2. Use the dough setting. Be sure and check your dough 5 minutes into the kneading cycle. You want it to be a smooth slightly tacky ball, not sticky.

  3. After the rise. I divided the dough into 6 ropes. Approximately 1" in diameter. I then braided 2 loaves. Be sure and tuck the ends firmly.

  4. Let rise on a greased baking sheet. You want the dough to be fully proofed.

  5. Lightly beat an egg with a tsp or two of water and sprinkle the seeds of your choice.

  6. Bake at 375F for 20-25 minutes. Remove from pan and cool on a wire rack.



Susy's Tips and Tricks


Once your dough ball has mixed for 4-5 minutes check and see how it is shaping up. If it's dry add a tsp of water and see if it helps it move nicely in the pan. If it appears rather wet; add a tbsp of flour.


Why does this happen? Flour is subject to humidity.

During periods of warm weather with high humidity, use less water and cooler water.


Flour is usually “wetter” in the summer and “drier” in the winter. If you don’t reduce the liquid in your recipe in summertime, you may end up with yeast dough that’s too soft and sticky. Dough can over-rise and then fall in the loaf pan; or your shaped loaf might flatten out (rather than rise) on the baking sheet.
