Italian Sandwich Buns- Bread machine

I made this bread in my bread machine and baked in the oven. You could make it entirely in your machine if desired. I'm a busy working mum so I don't have time to cook a potato; thus the use of potato flakes comes in so very handy.


Ingredients


  • 7 oz chicken stock or broth

  • 2 tbsp white sugar

  • 2 tbsp butter, softened

  • 5 oz cooking sauce, like the one for sloppy joes or meatloaf

  • 2 tbsp Italian salad dressing (liquid)


  • 1 tsp diastatic malt powder, optional

  • 3 cups bread or all-purpose flour

  • 2 1/4 tsp instant yeast


  • 1/2 cup shredded cheese; cheddar or Parmesan


Instructions


  1. Place first 8 ingredients in bread machine as suggested by the manufacturer. Use setting Dough.

  2. Once the mixture has created a near ball, sprinkle in the cheese.

  3. When dough setting completes. Remove from pan and place dough on a lightly floured surface. Roll 1/2" thick.

  4. Use a lid with a 4-5" diameter as a sample of what size you want these buns to be. Cut out 10-12 servings. Approximately 3 1/2 oz each.

  5. Place on lightly greased sheet; cover and let rise once more. Do the poke test and place in a preheated 375F oven until golden brown. Bake approximate 15-20 minutes.

  6. Remove from pan and cool on a rack.


Susie's Tips and Tricks


Check the dough ball about 5 minutes in. You want a ball that moves around fully in the pan. The dough should be smooth and slightly tacky, not sticky. You may need to add more flour (a tsp or so) or more water to make sure your dough ball fully shapes properly. Flour is subject to humidity and barometric pressure thus depending on the time of year you may need more or less of flour.
