Italian Beef Casserole

A simple delicious casserole

Sometimes a casserole is perfect for dinner. It's a simple way to feed a crowd and gives you leftovers. I am not claiming this as exceptionally healthy but once a while one has to let the chips fall where they may.







Ingredients


Base:


  • 2 1/2 cups Bisquick or similar product

  • 2 tsp no-salt herbs and spice

  • 1 cup cold water


Filling:


  • 4-5 slices cooked bacon (opt)


  • 1 1/2 lb ground beef

  • 2 cups celery, small diced

  • 2 tsp dried fennel

  • 2 tsp thyme, dried

  • 1/2 tsp paprika, dried

  • 1 tsp nutmeg

  • tt salt and pepper

  • handful raw spinach, chopped

  • 2 oz white wine


Sauce:


  • 3/4 cup sour cream, I use light

  • 3/4 cup mayonnaise, I use light

  • 3 oz sun-dried tomatoes, chopped

  • 1-2 tsp herb and garlic seasoning mix

  • 2 tsp Italian seasoning mix

  • 3 tbsp fresh basil (opt)


  • 2 cups Cheddar cheese, shredded

  • 2-3 green onions, chopped


Instructions

1. Preheat oven 350F. Mix biscuit mix and herbs together. Add water and mix together quickly and gently. Don't over-mix; once its blended spread with an offset spatula in a 9X13 glass pan. Bake 5-7 minutes. Set aside.


Keep the oven at 350F. Meanwhile, prepare the filling.


2. In a large saute pan on medium high heat cook and break up ground beef with celery, fennel seeds, thyme, paprika, nutmeg, and salt and pepper. Add spinach and let wilt. Add white wine and let cook entirely off. Remove from heat once cooked thoroughly.


3. In a medium bowl stir together sour cream, mayonnaise, sun-dried tomatoes, seasonings, and fresh herbs.


4. Mix together previously cooked bacon (if desired),with beef mixture. Place in the glass pan on top of the baked crust. Now spread the sauce on top. Sprinkle with cheese. Cover with foil. Bake until thoroughly heated, approximately 30 minutes. Remove foil and broil the top.


5. Garnish with green onions and serve with some vegetables.


 

Susie's Tips and Tricks


Omit the bacon if desired. I often prepare a package of bacon and set aside a few pieces; store in the freezer.


I use light sour cream and light mayonnaise. I tried the fat-free versions and frankly, they were dreadful.
