Oatmeal Honey Sunflower Bread with a Bread Machine

Updated: Oct 25, 2024

This loaf is outstanding! The crumb is fine. The texture is wonderful with the addition of sunflower seeds. The honey adds a pleasant touch of sweetness. I believe this would be a fine loaf for daily enjoyment.

Ingredients

  • 1 cup warm water 250 ml

  • 1/4 cup honey 60ml

  • 2 tbsp butter 25ml

  • 1 1/4 tsp salt 6 ml

  • 3 cups bread flour (recommended) 750ml

  • 1/2 cup old fashioned oatmeal 125ml

  • 2 tbsp powdered milk 25ml

  • 2 1/4 tsp instant yeast 7g

  • 1/4-1/2 cup sunflower seeds, unsalted, raw 100ml

Instructions

  1. Carefully measure the first 8 ingredients in the order recommended by your bread machine.

  2. Set the course on Basic. Add seeds when the machine signals.

If your machine doesn't notify you when to add special ingredients like nuts and seeds you can add it about 5 minutes before it completes it's kneading cycle. These cycles are typically around 19-22 minutes.

Susy's Tips and Tricks

Don't have milk powder? Use 1/4 cup (60ml) milk and the remaining water.

Breads with extra additions do best with higher gluten flour. If you must use all-purpose flour it would be very helpful to add a tablespoon of vital wheat gluten.

Check that dough ball 5 minutes in to kneading. It should be smooth and slightly tacky. Touch it.

Powdered milk is best added with the dry ingredients as it tends to clump.

You could add 1/3 to 1/2 cup dried cranberries or raisins.

This bread appears to last a bit longer too.
