Drunken Noodles

A simple side or Asian style main dish. Drunken noodles are bit spicy and rich with flavour. I presumed Drunken Noodles were made with some kind of booze. Not so, they are a popular street food after a night of partaking and partying. I made this dish low-carb by omitting the rice noodles and substituting zoodles.





Ingredients


Sauce:


  • 1 1/2 tbsp dark soy sauce

  • 1/2 tbsp regular soy sauce

  • 1 pinch brown sugar

  • 1 tbsp fish sauce

  • 2 tsp sriracha sauce

  • 2 tsp garlic powder

  • a few tbsp fresh chopped cilantro and/or basil

  • 1 tbsp oyster sauce

  • sprinkling of black pepper

  • tt Thai sweet chili sauce (opt)


  • 3 eggs

  • 1 tbsp sherry


Variety of vegetables:


  • onion, I used red

  • yellow or red bell peppers

  • serrano peppers

  • jalapeno peppers

  • cherry tomatoes


3-4 cups worth zucchini noodles, (approx 4 zucchinis)

8 oz rice noodles prepared per pkg (optional)


8 oz cooked chicken or shrimp (opt)


Instructions

1. Mix together sauce ingredients and set aside.


2. Blend egg mixture and cook in a medium hot skillet. Remove and chop with a knife in to long bites. Set aside.


3. After making zucchini into zoodles place in a microwave safe bowl and heat for 60-90 seconds just to slightly soften.


4. Now saute your vegetables; onions, tomatoes, peppers to desired tenderness. Now return the eggs, any prepared fully cooked chicken or shrimp to the pan to gently warm up. Add the sauce. Finally include the zoodles or rice noodles and let heat up. Season to taste.


 

Susie's Tips and Tricks


If you don't have dark soy use regular. The sauce needs a some punch. Use red pepper flakes if you don't have sriracha.


Let the eggs cook so they form large curds. Don't turn constantly.


Zucchini cooks fast. I always warm it up just a bit. Then add to a warm sauce. This prevents the vegetable from being soggy.


Quantities are completely up to you! I just use what I had on hand. Use more or less depending on your needs. Just keep in mind this dish is spicy.
