Take your plain-cooked #basmati rice and season it up! Add a pork roast and veggies... dinner is served! I love this side dish; use what you have in your fridge; some julienne carrots, celery, or sauteed mushrooms.
Ingredients
2 tsp oil
1/2 an onion, small diced
1 celery stalk, finely chopped
2 tsp dried thyme
sprinkling of no-salt seasoning
1-2 tsp garlic powder
tt salt and pepper
1 swirl of white wine
1 tbsp butter
2 cups cooked white rice
a handful of well-chopped fresh spinach
some fresh herbs: chopped-cilantro, basil, oregano
squeeze of lemon

1. In a large saute pan, heat oil. Add onion and celery, cooking just to soften. Now add thyme, salt-free seasoning, garlic, salt, and pepper. Let the herbs and spices bloom from the oil. Add a swirl of wine and let cook off. Check the tenderness of the celery. If necessary, add some extra water and turn up the heat to get the bite you prefer.
2. Now add a bit of butter and melt, then add rice and heat up. Toss in spinach and fresh herbs, the mixture will heat up quickly. Squeeze a bit of lemon. Be sure to taste to determine if you want more flavour, especially the salt-free seasoning. Serve hot and enjoy!
Susie's Tips and Tricks
Build flavour by tasting as you add more ingredients.
You can add peeled carrot pieces (chopped), some mushrooms, almonds, pine nuts, or possibly some corn. Use what you have; even some leftover broccoli. Just be sure that the piece is small in relation to the rice. You don't want big chunks.
