Need a healthy quick lunch? Or simple dinner with a grilled cheese? Make this soup. It comes together so easily and is wonderfully rich and filling. I skip the cream, but you could add if desired.
Ingredients
neutral oil
1/2 onion, diced small
2 celery, stalks, diced
2 carrots, diced
1 tbsp ketchup
bay leaf
2 tsp brown sugar
2- 14 oz cans tomatoes, diced or stewed and drained
3-4 Roma tomatoes
1 tbsp ketchup
1/2 tsp baking soda
1- 2 tsp Worcestershire sauce (use vegan if desired)
Instructions
1. In a small pan saute onions, celery, and carrots. Keep low and soften the vegetables. Stir in thyme bay leaf, and oregano. Add a sprinkling of salt and pepper.
2. Meanwhile, place fresh tomatoes, and canned tomatoes, in your high-speed blender. Add ketchup, brown sugar, baking soda, Worchestershire.
3. Now place sauteed vegetables in blender and use the Hot Soup setting or your High setting for approximately 6 mins. Taste once more and determine if the soup needs more salt and pepper. You can also garnish with fresh basil.
4. Alternatively, you could puree well in a standard blender , and then place in a pot on the stove and heat to desired temperature.
5. Garnish with basil.
