This is kind of a salad, sort of a dessert, but always always requested on our holiday table. I keep frozen cranberries on hand all year just for this delightful fluff.
Ingredients
12 oz pkg cranberries, rinsed
1 3/4 c white sugar
A pinch of kosher salt
15 oz can crushed pineapple, drained well (drink excess juice with rum)
12 oz pkg of mini marshmallows
1 1/2 cups whipping cream, very cold
1 tbsp Grand Marnier or Orange juice
Orange zest from a small orange
1/2 cup orange marmalade, (optional)
Instructions
1. In a blender crush a package of cranberries (frozen is fine) in a blender. Pulse, off and on until small bits remain. Add salt, sugar and set aside for 30 mins. It will get liquidy.
2. Mix the cranberry sugar mixture with the drained pineapple.
3. Now add marshmallows and stir together.
4. Place in refrigerator for 4 hour or overnight. They will soften and become very light.
5. Just prior to serving, add whipped cream. Whip ( on medium to medium high) whipping cream to billow fluffy peaks in a KitchenAid mixer using a balloon whisk. Once cream has begun to take form, add Grand Marnier or orange juice.
6. Gently add whipped cream to the cranberry pineapple marshmallows. Garnish with orange zest. Serve immediately. Or if served the same day, return to the fridge until serving time.
