Corn Cake

Corn cakes

Use a can of corn to make a tasty, affordable side dish. Its simple and yet, adds something special to your meal. You may want to add some cheddar or bacon to these tasty cakes. A good source of protein!













Ingredients

  • 1/4 cup liquid from can of corn

  • 2 eggs

  • 1-2 tsp herbs of your choice

  • 1 cup all purpose flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt


  • 1- 15 oz can of corn kernels

  • oil


Optional:

  • ham

  • bacon

  • cheddar cheese



Instructions

1. Drain off liquid from the canned corn and reserve 1/4 cup of liquid in a small bowl.


2. Add two eggs and whip together. Add herbs. Then add flour, baking powder, and salt. Blend well. Add the corn kernels and mix together.


3. Heat the saute pan over medium heat and add a small amount of oil. Then add 1/4 cup or so of batter and let cook until lightly brown.


4. Serve warm.


 

Susie's Tips and Tricks


For extra flavour, you can add chopped ham and bacon, or cheddar.


As your prepare your cakes, place them in a warm oven to serve hot with the rest of your meal.
