If you're making an Asian inspired meal, why not make this light and lovely side dish? Its great with Thai or Caribbean food. Get out that #instantpot to make the perfect accompaniment to shrimp skewers, or chicken satay.
Ingredients
1 tbsp oil
2 cups Basmati rice
1- 14 oz can coconut milk
1 cup water
1/2 tsp salt
cilantro stems
1 tsp lemon grass powder (optional)
cilantro leaves

1. Turn pressure cooker to saute and heat oil. Then add rice and stir so that all the rice is well-coated. Add lemon grass powder (optional), cilantro stems, coconut milk, water, and salt. Lock lid and set on high pressure for 5 minutes. Let valve naturally fall for 10 minutes then release any remaining pressure.
2. Remove the cilantro stems and cinnamon stick. Add fresh cilantro leaves. Taste and add more salt if desired. Serve and enjoy.
Susie's Tips and Tricks
You may use another rice. Be sure to check the times noted in your manual for different varieties of rice.
Add toasted almonds if desired.
If you don't have lemon grass, you could add some lemon rind or simply omit.
