Cinnamon Apple Twists


These delicious rolls are perfect as a morning treat. They are ideal as you prepare them the night before. Then in the morning bake in the oven. Serve warm with a maple or vanilla drizzle.

Ingredients


4 1/2 - 5 1/2 cups all purpose flour, divided

4 1/2 tsp instant yeast (2 pkts)

2 tsp salt


1 cup milk (2% works)

1/2 cup water

1/4 cup unsalted butter

1/4 cup honey


2 eggs

1 tsp vanilla extract


3/4 cup dried cranberries or raisins


Filling:

1 cup finely chopped apple, peeled

2 tsp cinnamon

1 1/2 cups white sugar

1 cup finely chopped nuts (optional)


1/4 cup butter, melted

Glaze:


1 cup powdered sugar

1/2 tsp vanilla or maple extract

pinch salt

4-6 tsp water

1. In your heavy-duty mixer such as KitchenAid add 2 cups flour, yeast, and salt. Stir together.


2. In a microwave safe bowl or in a small saucepan heat liquids: milk, water, butter, and honey to 125F (using instant yeast). Blend in the eggs and vanilla.


3. With machine on Stir setting on using the paddle add warm liquid. Once it is fully mixed in, turn mixer to setting no. 5 for 3 minutes. Add dried cranberries or raisins if desired.


4. Now add 2 1/4 to 2 1/2 cups flour slowly with the dough hook in place on setting 2 until the dough pulls towards the center. Now add more flour-approximately 1/4 to 3/4 cups Let the machine knead your dough for approximately 4-5 minutes. It is a sticky dough.


5. Cover the dough with plastic wrap and place in a draft-free location for 15 minutes. Meanwhile prepare the filling.


6. In a small bowl mix apples, sugar, and cinnamon. Optionally you may include nuts.


7. Generously grease 2 —— 9X9" or 8X8" square pans.


8. Punch down air out of the dough and divide in half. Roll out dough on a little bit of flour, shape into two 12X12" squares. Brush half of the butter on each square.


9. Add 1/4 of the apple mixture to the center of the dough. Spread it evenly through the center 1/3. Fold over one side of the dough. Now add another 1/4 of the apple mixture to the center. Finally fold the remaining side over the mixture. Cut crosswise approximately 1 1/4"wide strips. As you place in the greased pan twist the dough.


10. Cover and place in the refrigerator for 2 hours to 24 hours. I prepared mine in the evening (approximately 8 hours).

11. Remove pans from the refrigerator and uncover. Set aside for 10 minutes. Preheat oven to 375F. Bake for 20 minutes or so—notice that the bread gets brown. Now cover with aluminum foil and bake additional 10 minutes. The twists should be a deep golden brown color.

12. Remove from the pan and invert. Mix glaze ingredients to a thin consistency and drizzle over the twists.



 

Susie’s Tips & Tricks


The dough is slightly sticky.

After 2 hours in the fridge you may then opt to bake.

Next time I make these I am going to do a tad more apple. I’m thinking 1 1/2 cups.

We omit nuts as not everyone in the house is a fan.


Don’t do large chunks of apple it will not stay in the twist. Keep them small.

Idea! Add Nutella and apples to the filling!
