Chocolate Pudding

Forget the box! This delightful pudding comes together in no time with ease. I often double this recipe because we all love it so much.







Ingredients

  • 1/2 cup white sugar

  • 1/3 cup cocoa powder

  • 3 tbsp cornstarch

  • 1/4 tsp salt

  • 2 1/2 cups milk 2% is fine

  • 2 tsp vanilla extract

  • 1 tbsp butter


Instructions

In a medium pot place sugar, cocoa powder, and cornstarch. Using a whisk be sure and blend the cornstarch and break it down and blend well. You don't want lumps.

Turn on heat to medium. Slowly add milk and incorporate with the whisk. Now using a spoon stir making sure the bottom doesn't stick. It will thicken over time. Let cook 1 minute after it is thick and rich.

Remove from heat and add vanilla and butter and stir in.

You may serve warm or set in a an ice bath. (Place ice and water in a large bowl. Then place the smaller bowl (filled with pudding) to rapidly cool the pudding down. Some people prefer a pudding 'skin', if you don't cover with plastic wrap and tap the saran to touch the pudding. Alternatively, you may wish to place pudding in small ramekins (bowls) to cool quickly.
