I have loved this for years. You'll need a candy thermometer but it's so worth it, and makes a tasty treat for your children's lunches (or just for you!). Great idea for a party.
Ingredients
non-stick spray
1/2 cup corn syrup (dark preferred, but not necessary)
1/2 cup butter
1 cup brown sugar, firmly packed
2 tbsp cocoa powder
1 tsp vanilla extract
6 1/2 cups regular O's cereal
Instructions
Read Susie's Tips and Tricks below
1. Grease a 9X13 pan with non-stick spray and set aside.
2. Measure out 6 1/2 cups of O's cereal in a fairly large bowl.
3. In a medium pot place: corn syrup, butter, brown sugar, and cocoa powder. Place candy thermometer in pot making sure it is not touching the very bottom of the pot. Turn heat to medium high. Stir continually. Do not rush the process, let the sugars modify, then just as the temperature reaches 236 F ("Soft Ball" stage) remove from the heat source.
4. Now add vanilla extract. Next add liquefied mixture to cereal and working quickly toss to coat evenly. Place the chocolate cereal into the 9x13 pan and spread as evenly as possible. If necessary use a piece of wax paper to tamp down.
5. Set aside and within 30 minutes it should be cool and ready to cut.

I like a gooey product, so I am very watchful of 236F. If you go beyond that temperature, you will get a crispy bar and less of a soft, moist product. Still enjoyable, but different!
