Chicken Pot Pie is a perennial favorite. The soup concept is easily adaptable from a stew. I like to have my meals fresh and delicious so I work a few 'pots" at the same time. Recipes often have particular ingredients, frankly as long as you like the mixture add it. I have added mushrooms, fresh spinach, green beans. What does your family love? Ingredients
1-2 tbsp oil of your choice
1 medium onion, medium diced
3-4 garlic cloves, minced
2 tsp dried thyme
sprinkle of red pepper flakes
tt salt and pepper
1 to 1 1/2 lb chicken thighs, chopped in 1 inch pieces
2 oz white wine
1 cup carrots, small diced
1 cup celery, small diced
1/2 cup corn kernels
2 cups chicken stock
1/4 cup a.p. flour
2 cup milk
bacon
scallions
Cheddar, shredded
fresh herbs of your choice, thyme, basil
Instructions

1. If you want fresh hot biscuits begin with that first.
2. In a medium hot Dutch oven add the oil and heat up. Add the onion and garlic; let cook 2 minutes. Now add seasoned (thyme, red pepper flakes, salt and pepper)chicken. As the piece cook set them aside.
3. Meanwhile, use a microwave safe container add the carrots and celery along with 1/4 cup of water with some salt. Cover and microwave for 3 to 4 minutes until tender. Add the corn. This will warm the kernels up. Drain and set aside, covered.
4. As the chicken is cooked; set on a cutting board and chop into bite-size pieces. Once all of the chicken is fully cooked and removed, add white wine let cook off. Now add a pad of butter or a swirl of oil. Now add flour; stir for a couple minutes so that the flour cooks fully.
5. Add 2 cups chicken stock. Be sure the heat is medium; not boiling and bring to a thick consistency.
6. Now add the milk. Let thicken. If it is too thin for your liking see Tips and Tricks below. Add chicken, cooked vegetables, along with fresh spinach, and fresh herbs. Don't forget to re-season the entire pot.
7. Serve with the biscuits and perhaps some crumbled bacon or sharp cheddar.
Susie's Tips and Tricks
The biscuits in this picture are simple Bisquick cheddar and garlic with butter. I just don't like the ones in a can.
Vegetables in soup are a wonderful way to increase nutrition. You could add green beans, mushrooms, peas. Yes, even potatoes. Be sure they are fork tender and not overcooked.
Is your soup a little thin? Before you return the vegetables and the chicken. Make a slurry in a hurry. Mix together a blend of milk or water with flour. Ratio about 2-3 Tbsp flour or say cornstarch to 1/4 cup liquid. Be sure and mix very well; so no lumps remain. Add to the pot; this should thicken rather quickly.
