Whenever I see these red globe grapes in season I make this delightful appetizer. You may want to double the recipe. They are always a hit!
Ingredients
3/4 cup soft spreadable garlic & herb cheese, Boursin works
1/4 cup crumbled blue or Roquefort cheese
1/3 cup finely chopped dried apricots or mango
2 tbsp crystallized ginger
1/2 tsp Thai hot sauce
tt salt and pepper
1/3-1/2 cup finely chopped nuts, walnut or pecan work well
60-70 large red globe grapes
Instructions
1. Blend together spreadable cheese, blue cheese, dried fruit, ginger, hot sauce and some salt and pepper.
2. Trim the bottom of the grape so it stands up right. Then cut off the top and carefully remove the center along with the seeds. Now fill with the cheese mixture. Then roll into finely chopped nuts.
Place in refrigerator for 1-2 hours. Then serve.
Susie's Tips and Tricks
If you aren't a fan of blue cheese, use some sharp cheddar and Parmesan.
Add some fresh herbs if you have them on hand; basil is lovely, or thyme. Powdered garlic would be nice too.
You may make these the day ahead but be aware the bottoms my weep a little with fruit juice. Just wipe up and then serve.
