Carrot, Ancient Seeds, & Raisin Bread / bread machine


A lovely loaf that makes fantastic toast. It's tasty without being sweet. Adding the ancient seeds adds some nutty flavour and texture. 1 1/2 lb/680g loaf


Ingredients


  • 3/4 cup warm water 178g

  • 1/4 cup milk 61g

  • 2 tbsp brown sugar 27g

  • 1 1/2 tsp salt 9g

  • 2 tbsp butter 28g

  • 1 cup shredded carrots 71g

  • 1 tsp cinnamon powder (optional)

  • 3 1/4 cup bread flour 394g

  • 1 1/2 tsp yeast 4g


  • 1/3 cup ancient seeds/grains or chopped nuts 80g

  • 1/3 cup raisins 53g


Instructions

  1. Place all ingredients in machine pan as recommended by your bread machine. (You may omit the cinnamon if desired for a more savory version.

  2. Set machine to Basic setting and desired crust setting.

  3. Add seeds and raisins when machine signals additions or if your machine cycle is 19-22 minutes long. Set timer 5 minutes prior to completion.

  4. Remove bread from pan when complete. Cool completely before serving.


 

Susy's Tips and Tricks


Use honey if desired; instead of brown sugar.


My ancient seed mix includes buckwheat, flaxseed, millet, Chia, seeds, hemp, amaranth seeds. You could use chopped walnuts or pecans.


Feeling a bit healthier? Substitute 1/4-1/3 cup bread flour for white whole wheat flour. Same settings will work.


Measure your flour by weight or by stirring and dumping. Do not scoop. Do not shake measuring cup. Scrape excess with flat edge.


I served with an orange butter.
