Caramel Popcorn

I use to buy microwave popcorn. I know, shocker! I've always loved getting the caramel popcorn flavour. Upon discovering the chemicals that are used in those packets, I searched to create a recipe that is better than store-bought. It's rich, tasty, and oh so much better when its made at home!







Ingredients


  • 2/3 cup unpopped corn kernels, prepared as desired


  • 1/2 cup butter

  • 1/4 cup corn syrup

  • 1 cup brown sugar, firmly packed

  • pinch of salt

  • 1/2 tsp vanilla extract

  • 1 tsp baking soda



Instructions


1. Prepare your popcorn as desired and place in a large bowl. I have a great microwave bowl that works beautifully for popcorn.


2. In a medium size pot place butter, corn syrup, brown sugar, salt. Melt and blend together, stirring while it thickens. Remove from heat and add vanilla extract. Then stir in the baking soda. The soda will cause the mixture to bubble and spurt a bit. Pour immediately on your popcorn as evenly as possible then, quickly toss with a spoon.


3. Hide from the kids and eat it all in peace!
