Using the sweet dough recipe here on KitchenAdore, you can have cinnamon buns at your disposal. YUM! I like my filling a bit on the moister side, some people prefer a drier roll. Either way, they'll be a hit - they're Cinnamon Buns!
Ingredients
Flour for rolling
1/4 cup butter, softened
1/2 cup white or brown sugar
2 tsp cinnamon powder
pinch of salt
1/2 c butter, softened, for topping and center, divided
powdered sugar
milk
Instructions
1. Generously grease a 9x13 pan with a high temperature non-stick spray. On a lightly floured surface, roll out the dough into an 18 x 12“ rectangle. Spread with 1/4 cup butter.
2. In a small bowl, combine sugar with cinnamon and salt. Blend well and sprinkle over buttered dough. I add extra, up to you. I'm fancy!
3. Start on the long side and roll tightly by hand, folding edges to seal. Cut into 18 slices (see photo for slicing with unflavored floss), placing cut side down in pan. cover and let rise about 35 to 40 minutes.
4. You can use the poke technique again (poke in with finger about one inch; if indent remains, dough is ready). Then randomly place 4 tbsp of soft butter all around in tiny pieces on the dough tops.
5. Preheat oven to 375F. Bake 25 to 30 minutes. Remove from pan immediately.
6. Do a drizzle of powdered sugar and milk or cream cheese frosting.
Tips and Tricks
Non-stick spray can ruin non-stick pans. It can have a added ingredient: lecithin. It causes a build up. You can buy the spray without the added ingredient or specially formulated bakery spray made not to gum up.
Did your cinnamon buns rise in the center? Kind of like a dunce cap? Give the rolls more room in the pan.
Keep an eye on sweet breads. Sugar caramelizes easier.
Cinnamon powder comes in many varieties Vietnamese is said to be especially delightful!
