Beef and Broccoli Meatballs

While we love broccoli I prefer this recipe with sugar snap peas. I think the tender crisp texture goes so much better with meatballs. Use broccoli if you desire but know that the star is really the wonderful meatballs. Serve with rice; use your Instantpot to keep it nice and warm.














Ingredients


Sauce:

  • 2/3 cup soy sauce

  • 1/4 cup dry sherry

  • 2 tbsp fresh grated ginger

  • 2 tbsp ketchup

  • 2 tbsp spicy brown mustard

  • 2 tsp chicken stock powder

  • 1 tbps garlic powder

  • 2 tbsp brown sugar

  • Opt: Thai chili paste


  • sugar snap peas

  • broccoli

  • green beans


  • 1 1/2 lb ground beef

  • 1 1/2 lb ground pork

  • 2 tbsp brown mustard

  • 1 tbsp oyster sauce

  • 1 medium onion, grated

  • 3-4 cloves garlic, minced

  • 1/3 cup chopped green onion, small cut

  • tt salt and pepper

  • 3 egg yolks

  • 1 cup milk

  • 1 cup bread crumbs

  • tt salt and pepper


  • 2 tbsp cornstarch


Garnish:

  • scallion, sliced on the bias

  • sesame seeds

  • almonds



Instructions


1. Prepare the rice first if it your accompaniment.


2. Preheat oven to 350F.


3. Now make the sauce: mix together soy sauce, sherry, ketchup, mustard, chicken stock powder, garlic powder and brown sugar. Set aside.


4. Steam your sugar snap peas and set aside. Or alternatively green beans or broccoli.


5. Mix together in a medium bowl ground meat, brown mustard, oyster sauce, onion, garlic, green onion, salt and pepper, egg yolks, and milk with bread crumbs.


6. Place shaped meatballs on a rimmed baking sheet and cook until 165F. Smaller meatballs take approximately 18-20 minutes. If they are larger add additional time.


7. In a large frying pan heat up 3/4s of the sauce. Mix the remaining liquid with cornstarch; blending well. Add to the pan and let thicken. Now add the prepared meatballs. Toss with the steamed vegetables.


8. Garnish with fresh scallion and some sesame seeds. Serve with rice and enjoy!


 

Susie's Tips and Tricks


If you like a bit of spice in your sauce add a smidge of Thai chili sauce.


For this recipe use fresh ginger. Did you know you can freeze a knob of ginger? I highly recommend keeping some in the freezer as needed.


Use ground turkey if desired; don't go too low on the fat percentage however, as it will give you very dry results.
