Apple cider apple bits bread


Apple cider bread is pretty great. I thought that adding some fresh apple and using apple sauce in the dough would take it over the top, it most certainly did. I bet this would be an outstanding French toast. My kids loved it!


Ingredients


  • 1 cup apple cider or juice 113g

  • 1/3 cup applesauce unsweetened 38g

  • 4 tbsp milk 61g

  • 2 tbsp butter or oil

  • 1/4 cup brown sugar 53g

  • 1 1/2 tsp salt

  • 3 cups bread flour 360g (see note)

  • 3/4 tsp cinnamon

  • 1/4 tsp ginger powder

  • 1/4 tsp cardamom

  • 1/4 tsp nutmeg

  • 1/4 tsp allspice

  • 2 1/4 tsp instant or active dry yeast 7g


  • 1/3 cup fresh apple with peel, chopped finely


Instructions


  1. Place all ingredients except fresh apple in bread machine pan. Use the Sweet setting with crust colour as desired.

  2. After the dough ball has come together, at the 5 to 6 minute mark check and see that it is smooth and slightly tacky. You may need to add, a little bit of liquid or flour. it is easier to hold back a little bit of a flower until you know what the dough ball will look like and if you need it all.

 

Susy’s Tips and Tricks


I used a flavoured cherry apple sauce. I don’t think it makes any difference. One of those to-go cups is ideal.


You could add raisins (I’d say 1/2-3/4 cups) however, you may wish to add 2 tsp of vital wheat gluten to help the structure of the bread.


If you have a premixed apple pie spice mix use that instead of the noted spices.


When adding your flour hold back 1/3 of a cup, this will allow your double ball to form nicely.


when measuring flour with cups, be sure and lightly stir the flour and then spoon it in the measuring cup. Do not shake the cup.
