Amazing Apple Cake with Apple Cider Glaze

Apple cake is simple and wonderful!

This apple cake is rich with flavour and easy to make. Serve with an apple cider glaze or vanilla ice cream. Or keep it simple and delicious with a sprinkling of powdered sugar or whipped cream.










Ingredients

  • 2 cups of apples, peeled and diced small

  • 1 cup sugar


  • 1 cup all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg


  • 1 egg

  • 1/4 cup vegetable oil

  • 1 tsp vanilla extract

  • 1/2 tsp lemon juice


  • 1/4 cup apple cider juice

  • 1/2-3/4 cup powdered sugar

  • 1/2 tsp cinnamon, ground

  • 1/4 tsp cardamom

  • 1 tbsp butter

  • pinch of salt



Instructions

1. Preheat oven to 350F.


2. In a small bowl, place apples and sugar together; stir and set aside.


3. Mix dry ingredients: flour, baking soda, cinnamon, and nutmeg in a separate bowl, stirring together.


4. Mix wet ingredients: egg, oil, vanilla, and lemon juice together.


5. Mix wet ingredients with sugared apples. Add half of the flour mixture to the apple bowl, stir together, then add remaining and mix well. Place in a well-greased 11X7 pan, on middle rack for 20 to 25 minutes. Remove when the center is dry and a toothpick comes out clean.


6. While cake is cooling, make glaze. In a small pot, boil apple cider until it reduces to half (2 tbsp). This shouldn't take long. Now stir in butter, cinnamon, cardamom, and salt. Now add powdered sugar to desired consistency. Drizzle on top.



 

Susie's Tips and Tricks


Why add salt to a sweet glaze? Culinary tests show that salt tempers the saccharine like sweetness of sugar. Just a pinch should work.


If you like a thicker cake, use an 8X8 pan.


If desired, you could do a simple vanilla glaze.
