Air-Fryer Churros

Churros--a wonderful Mexican treat! Traditionally deep-fried and tossed in cinnamon sugar. The crispy exterior and tender interior is pretty darn good for an air-fryer version. I made mine smaller--fun sized! You can form them in longer sticks if your air-fryer has the room.









Ingredients


1/2 cup butter, unsalted (preferred)

1 cup milk, 2% works or water


1 cup all-purpose flour

4 eggs, large


2 tsp cinnamon

1/2 cup white granulated sugar


A pastry bag or Ziploc bag with scissors



Instructions


1. Measure all ingredients.


2. In a large pot bring butter and milk to a boil. Keep an eye on it, so that it doesn't boil over.


3. Immediately add flour all at once. Stir vigorously to incorporate flour fully. It should become a mass/ball. Remove from heat.


4. Now ONE at a TIME, add eggs. Be sure and blend well after each egg. (It separates a bit but keep working it together.) It takes a strong arm--or optionally you could place in a mixer and let the Kitchenaid do the work.


5. Now place mixture in a pastry bag with a star tip or use a heavy-duty plastic bag with a corner tip cut off.


6. If your air fryer requires pre-heating set to 375F. (The Pampered Chef Deluxe Air Fryer does not need to be pre-heated.)


7. Grease your racks if they require some oil. (if using the Pampered Chef air fryer do not use parchment.) Otherwise, you may lay down some parchment paper.


8. Squeeze small or larger churros on the racks. If using a plastic bag you may find it helpful to use scissors to slice a piece of dough. Place racks in the air fryer for 10-15 minutes. Be sure and switch the rack (if offered) at the half way time. (Pampered Chef Air Fryer has a chime to remind you to exchange the rack positions for optimum baking.)


9. Immediately, remove from the rack and toss in the sugar/cinnamon mixture. Serve and enjoy!


 

Susie's Tips and Tricks


If you have salted butter, no problem--use it.


Some recipes use milk others use water. Both work.

Churros like cream puffs have no leavener, thus high heat will cause steam to let the batter rise.


You may half this recipe if desired.


Churros aren't very good the next day. Enjoy immediately.
